I’m keeping up with my healthy food kick (!) and I wanted to share a new recipe and make an announcement. First with the food (duh).
Curried Cream of Broccoli Soup!
Michelle at Nom Nom Paleo has an amazing broccoli soup recipe. I made a half batch, since we’re a family of 2, and I can say I would have eaten it all, even if we made a full batch! For the record, I ate an appropriate serving size.
It’s very simple. You chop onions, shallots, and leeks and sauté them in a stock pot until they’re softened. While those are sautéing, chop broccoli and about half an apple. Add them to the softened veggies. Pour chicken stock (or water) to cover the veggies, bring to a boil, then simmer for about 20 minutes. Then, add in curry powder (we have curry cubes – whatevs – we used two and probably should have only used one-and-a-half) and mix. Turn off the stove and let it cool for a minute, then blend it all smooth (the immersion blender is my enemy, so I had Doug do it). I ate it with my funny “paleo bread.”
I’m still dreaming of it. It really hits the spot, as if it were broccoli cheddar soup. Super glad for it on a day like today! See what we’ll now mark as Exhibit A:
The announcement should come as no surprise. I’m creating a new “page” where I’ll post recipes that are working for me on a healthy level (and the ones that failed, just in case someone is thinking about trying them). What is that on top of the soup in the picture? Looks like some kind of meat? It does look/sound good and I will have to try it soon! I just wont tell Brian what is in it and maybe he will eat it…lol
Yeah, it’s leftover beef. Obviously I’m not going to add that to my soup, but I like the idea of bulking it up.
Also, sautéing the onions until they are soft, adding such a large amount a curry, and puréeing the soup at the end really mask the onions. You might be able to fool Brian!
